So in the past seven days, I have been battling pneumonia, shattered my iPhone, and started classes. Needless to say, I’ve enjoyed absolutely none of that. Two things I do enjoy? Cowboys and dinner. So what could make me happier in the midst of broken phones and high fevers than… Cowboy Dinner??
This week, we are making another favorite meal from my childhood. I haven’t quite decided if we had this so often because it is so easy to make or if we were just that poor… either way, I loved it then and I love it now! Rich or poor, cowboy or city boy, you’re sure to love this easy, tasty dinner!
What You’ll Need
- Ground beef (½ lb or so per person)
- Potatoes (½-1 per person)
- Carrots (2-4 per person)
- Sweet onions (½ an onion per person)
What You’ll Do
Break apart meat into variously sized chunks, chop last three ingredients into large pieces, and place all ingredients on aluminum foil square. Wrap the foil in a second piece of foil. Bake at 355° for 45-60 minutes or until hamburger is cooked completely through (or if you find yourself on the Oregon Trail, just throw it in the fire for about 20-30 minutes). Serve alone or over a bed of rice.
*** Some of the meat looks red in the photos, but I can assure you it was cooked thoroughly. Sometimes those pictures are funny little things…
Who knew it was so easy to be a cowboy? Okay, so maybe there is more to being a cowboy… like chaps… and spurs…. and muscles… and riding… and…. oh… wait.... cooking. Right. So next time you’re on the trail and want to show off your chef-ly tendencies, whip up a batch of cowboy dinner and before long, you’ll have ‘em sayin’ YEEHAW!
